Friday pizza as we call it in my home, Yay!

It will take you no more than 20 minutes to make 2 large pizzas, which means this is cheaper, healthier and quicker than going out to buy a pizza! Although that can be fun sometimes.300 grams spelt (for beginners I would use fine and whole fifty-fifty. I usually only use whole wheat spelt for my pizza)

3 teaspoons cream of tartar
1 teaspoon sea salt
2 teaspoon oregano (optional)
2-3 tablespoons cold pressed olive oil or coconut oil
180 ml ca hot water

Fire up your oven to 180 degrees and boil the water. Blend the dry ingredients together and mix in the water. Make dough using one spoon and then simply use your hands. (All this takes around 3 minutes). Then I use a little fine spelt to even out the pizza with a rolling pin. This makes for two pizzas at the size of an oven plate (so quite large) but you roll them out thin (I always make my pizza base very thin). Bake them for about 5 minutes using baking paper under the pizzas.

When they come out of the oven you simply put on it whatever you want. My favorite topping is this:

I blend together organic ketchup and organic tomato purée in a bowl, fifty-fifty along with crushed garlic (if I have time and am in a garlic mood) and maybe some oregano or marjoram (optional). I put this on the pizzas – a lot of it! Then for my kids I simply just put grated mozzarella and throw the pizza in the oven again for about 4-5 minutes. When they come out I pour garlic olive oil over them and serve!

For me and my husband I usually put diced ripe tomatoes on it (very red, they ripen at room temperature) and some other vegetables I like. It is very nice to bake for a few minutes zucchini slices, pumpkin and other vegetables you like and put them on your pizza for instance. Then I’ll add the grated mozzarella. And after it has been baked for 4-5 minutes I put lots of garlic oil on it and fresh basil and fresh rucola. I also like sun dried tomatoes and Parmesan. I ususally force feed my children a little salad with too

icon Small hands can definitely help out and if you don’t like the idea of spelt all over your floor you can negotiate that they can spread the sauce and the cheese instead:)

icon You can substitute some of the spelt flour with buckwheat flour (gluten free) and you can also add some sesame seeds or finely ground sunflower seeds to the dough…all up to you!:)
